Magic Beans

So here is an absolutely awesome way to prepare black beans.  
This method of preparation was shared with me by a man I met at a local restaurant.  
He is native to Mexico and this is the recipe he was raised on and this is how he still prepares black beans to this day.



What You Will Need:
Dried Organic Black Beans (You can typically buy them in a bag)
Cumin (to taste -- I used a full Tablespoon -- you might like more or less than me?)
Sea Salt (1 tsp)
Paprika (1 tsp)
Oregano (1 tsp)
White Pepper (1 tsp)
Onion (1)
Garlic (3 cloves)

How to Prepare:

First Day -- Soak Overnight:
Soak the beans for 12 hours -- use amount of water indicated on package +  an extra cup

Next Day -- Add Ingredients:
*Saute the onion and garlic in coconut oil (for about 5 mins max)
*Add in spices along with onion and garlic and stir until combined
*Boil a large pot of water (about 8 - 10 cups)
*Once boiling, add the pre-soaked beans along with the onion, garlic, spices mixture
*Let all of this simmer for an hour, partially covered -- let it simmer until almost all liquid is absorbed
*After an hour of simmering you can drain excess liquid if you like or store the beans with a bit of liquid (spices will be able to "mingle" longer this way)

What to do with your savory beans???
I cooked up a batch of Volcano Rice and then sauteed some yellow squash and zucchini and then added all of this together with a little Earth Balance Soy Free "butter" and some Sea Salt.    
Sooo good, very simple and easy to re-heat.   Also very pretty to look at which is important!
